We popularly call this as lemon rice, but most of the time we use lime. This is because lemon is not available very often in Tamil Nadu. The difference between lemon and lime is only with the size. The lemon is slightly smaller than the lime and the lime is little bigger than the lemon. Lime is more rogue than lemon. In south of Asia and mostly in (South of India) Tamil Nadu, we use more of lime than lemon. Lime is much sharper and so we can use them less in quantity. If you are able to get lemon in your locality then it is far good that the dish will suit the name of our recipe, "Tamil Nadu Style Lemon Rice". In this Tamil Nadu Style Lemon rice recipe, we are going to see the things required for preparing Lemon rice and also the details cooking procedure for making this Tamil Nadu style Lemin Rice recipe.
So let us start up with the ingredients required for preparing Tamil Nadu Style Lemon Rice Recipe.
Things Needed for Tamil Nadu Style Lemon Rice Recipe
Raw Rice - 1 kg
Red Chilli - 5 to 10 No. (depends on the spiciness of the chilli)
Green Chilli - 5 to 10 No. (depends on the spiciness of the chilli)
Mustard seeds - 50 gram
Split Urad Dal - 50 gram
Roasted Gram Dal - 50 gram
Ginger - 1 inch piece (finely chopped)
Curry Leaves - 1 branch
Turmeric Powder - 5 gram
Asafoetida/ Hing - 3 Pinches
Lemon/ Lime Juice from 2 to 4 fruits(depends on the sourness of the fruit)
Oil - 250 gram
Salt to taste
Now let us see the cooking procedure for this Lemon Rice
First of all cook the raw rice with required amount of salt with excess water. Cook until you get the right cosistency in which the rice is well cooked but still each particles must spare apart. At this stage you have to drain out the excess water from the rice. Soon after draining the excess water from the rice, you have to take a wide plate and transfer all the rice on to it. You have to spread the rice evenly through the large plate so the rice cools down. This will help you to get the rice as loose particles.
Now for frying the ingredients, you have to take a pan and add oil to it.
Once the oil is hot enough, you have to add the split red chillies to it.
After adding the red chillies, you must add the mustard seeds and let it to splatter.
Next to the mustard seeds, you should add the split urad dal and roasted gram dal.
Let it to turn into golden brown color. Some people (Andhra Style) add peanuts, but in our Tamil Nadu's special Lemon rice we are not going to add it. Some others (from the north side) like to add cashew nuts. These enhances the taste and gives richness to the dish. As we are preparing Tamil Nadu's special Lemon Rice we are not adding these. But if we wish to enhance our dish, these ingredients can also be added.
After adding all dals, we have to add finely chopped ginger and slit green chillies. We have added only a little bit of ginger that too very finely chopped. We are adding a whole some of green chillies to enrich the flavor of our dish. Both these ingredients must get fried well.
Following this, we are going to add a hand full of curry leaves and soon after it splatters, we can add Asafoetida/ Hing, turmeric powder and required amount of salt. Note that we have added salt along with the rice while cooking. This salt is just for the ingredients that we add now.
Finally you can mix up all the ingredients and put off the flame. Soon after you put off the flame, you have to add the lemon/ lime juice that you have kept ready.
Then wait for somewhile so that all the flavors blend up together with the lemon juice.
At last you have to transfer the ingredients in this pan to the vessel in which you have speard out the rice. Mix the ingredients to the rice well and taste it. The spice, sourness and salt must be little strong enough at this stage so that the rice will absorb them all in a while.
Rather than serving this Tamil Nadu Style Lemon Rice at once, you can wait alomst an hour before you serve. This one hour (minimum) is required for all the ingredients to get set in the dish.
Now Tamil Nadu Style Lemon Rice is ready for serving after an hour mouth watering waiting time. Along with this Tamil Nadu Style Lemon Rice you can serve Potato Masala, Sambar, Brinjal Masala or any pickle as your family members prefer.
