In this article i have shared one of my innovative recipes that is good for health. This healthy sweet recipe is made with simple ingredients that are easily available. Usually seedai is a snack that will be made with maida or all purpose flour. But in this recipe i have used wheat as a main ingredient. Along with that health benefit, I have also improved the Godhumai seedai recipe with a sweet ingredient that is different from usual Seedai recipe. Instead of usual normal sugar, I have used Jaggery (Karuppatti) in this Godhumai Seedai recipe (Sweet Wheat Balls Recipe). Karupatti (Jaggery) is good to use insted of sugar as it comes direct from nature without any chemical or non organic ingredients added with it. Items needed for preparing this Karuppatti Godhumai Seedai Recipe (Sweet Wheat Balls Recipe)
Wheat Flour - 1 Cup
Maida Flour - 1/4 Cup
Rava/ Sooji - 1/4 Cup
Coconut Grated - 1/4 Cup
Jaggery(Karupatti) - 1 Cup
Cardamom powdered- 5 Pieces
Oil/ Ghee for frying
Eno salt - 1 small spoon or few pinches
After knowing the ingredients that you will need for preparing this Karuppatti Godhumai Seedai (Sweet Wheat Balls), we will now see how to make this sweet snacks dish.
How to prepare Karuppatti Godhumai Seedai (Sweet Wheat Balls)
First you have to take the jaggery (karupatti) and break into small pieces. Then put it in a thick bottom vessel and add a little amout of water. Now heat it and let it to melt completely. The amout of water that you add is very important. You should not add more water and make the karupatti (Jaggery) as a thin liquid. You have to add very little and stay near the vessel until you get a thick karupatti paagu (melted Jaggery). The consistency of the kaupatti paagu (melted jaggery) should be like honey.
In the mean while take the wheat flour, maida (All Purpose) flour, Rava (Sooji) and grated coconut in a vessel and add Eno salt and powdered cardamom to it. Mix these ingredients well when it is in powder stage itself. Soon after the kaupatti paagu (Melted Jaggery) is ready, you must filter it with a stainer so that all the dust from the Karupatti (Jaggery) will get removed. You can filter directly into the mixture of flours that you have kept ready. If you let the melted Jaggery to cool, it will thicken and become like a Jam. You should not let the Karupatti paagu (melted Jaggery) to get to that stage.
Once you have added the Karupatti paagu (melted jaggery) along with the mixture of flours you have to knead it and make it as a dough that is shown in the picture. Then you have to take a small amount of dough and make it as a small ball. Repeat the same process for rest for the dough and keep them ready for frying.
Now take oil or ghee in a thick bottom vessel and heat it up. I have used refined sunflower oil for frying. You can replace it with ghee or any other oil that you are convinient with. The flame must be in medium while you are frying these Karupatti Godhumai Seedai (Sweet Wheat Balls). When you fry, put a set of 10 to 15 pieces of Karupatti Godhumai Seedai (Sweet Wheat Balls) into the oil and keep turning them frequently. The Karupatti Godhumai Seedai (Sweet Wheat Balls) will be fried and ready to take it off the flame once the oil stops bubbling. Now you can repeate the same process for the rest of the balls.
Let me tell you the purpose of the other ingredients that I have added along with the wheat and Jaggery.

In the introduction, I have siad that Wheat is used instead of maida. You may wonder, then why this person has added maida too in it. I have added it just as a bonding agent. You can reduce the amount of maida (All Purpose) flour too in it. I have added it just as a bonding agent. You can reduce the amount of maida (All Purpose) flour or even avoid it. The second one is Rava/ Sooji that I have added. This is an extra ingredient that will enhance the crunchiness of the Karupatti Godhumai Seedai (Sweet Wheat Balls). The third one is Coconut. I have added this ingredient for enriching the taste of the dish. The next is the cardamom powder. This ingredient will give a sweet aroma and make the next door people peep through your window and ask what that special you are preparing. Finally Eno salt. You may be confused seeing this item in the list of ingredients for a sweet dish. But I have used this instead of soda powder or soda salt. Usually, we add soda salt for crispiness in any dish. We also know that using soda salt is unhealthly. That is why I have susptituted the soda salt with Eno Salt. Both will give equally crispy Karupatti Godhumai Seedai (Sweet Wheat Balls Recipe). Eno salt have no health defects. Of course we use to mix it with water and drink for good digestion. So what harm is it going to give if we add that in a dish. If you feel that deep frying is unhealthly, you can also mix the same ingredients and make it as a thin batter to prepare it like a dosa on a tawa.
