Ingredients required for preparing Palm Sugar, Chocolate Pudding with Caramel in a Cooker
All Purpose (Maida) Flour - 1 Cup
Egg - 4 White
Milk - 1 Cup
Butter - 1 Tablespoon
Sugar - 1 Cup
Palm Sugar (Panam Kalkandu)- 1 Cup
Salt - A Pinch
Chocolate or any flavour Powder - 1/2 Cup
Caramel - For Topping
Steps to prepare Palm Sugar, Chocolate Pudding with Caramel in a Cooker at home
First take a bowl and mix milk sugar and butter together. Whip it continuously until the sugar melts in milk. Butter will not get melted in milk. It will stay solid while mixing and will melt while baking.
Now set this aside and take another bowl. In this bowl put the maida (all purpose) flour, a pinch of salt, Powdered Palm Sugar and Chocolate or any of your favourite flavour.
Mix all the powders together so that the flavour, palm sugar and all other contents blend well. Then pour the milk, sugar and butter mixture with this and make it as a thick paste. After a paste like consistency is achieved, add the egg white with this and mix further for some time.
In a separate bowl, mix chocolate and palm sugar powders together.
After this take mould in any shape of your choice. Grease the mould with either oil, ghee, or butter and pour the liquid content to it. Above that put the powder content and then pour just 50 ml of water along with it. Do not mix anything now. Just place the mould in a cooker with a glass of water beneath. When the mould is placed in water it will get baked and become puffy.
Cook it for 5 minutes in high pressure and 5 to 10 minutes in low flame.
After the pudding is baked, transfer it to a serving plate and add caramel over it for toppings. You can serve this pudding either hot as soon as baking or chill it in refrigerator and serve it cool.
Adding Maida Flour to pudding is optional as it will give a cake texture and taste.
Instead of adding skimmed milk you can supplement it with soy milk or Fat-Free Milk.
Instead of Chocolate flavour you can also add any other fruit or other flavours of your choice.
Also for topping you need not stick on with caramel, you can use fresh cream or any other milk sweets that are easily available.
