Ingredients required for Tamil Nadu modish Mutton
Gravy with Coconut Milk
Mutton - 1 Kg
Curd - 1 Cup
Coconut - 2 LargeCurd - 1 Cup
Oil - 2 Tablespoons
Ghee - 1 Tablespoon
Cloves – 5 Piece
Green Cardamoms – 5 Buds
Cinnamon – 2 Inch Piece
Finely Chopped Onion – 2 Cups
Dry Red Chilli Powder - 2 Teaspoons
Coriander Powder - 2 Teaspoons
Turmeric Powder -1 Teaspoon
Garlic Paste - 2 Teaspoons
Ginger Paste - 1 Teaspoon
Salt – As much as required
Tamil Nadu modish Mutton Gravy with Coconut Milk
preparation procedure
First cut the mutton to medium sized dices and wash them
with two or three times in running water.
Now put them in a bowl and add a cup of curd to it for marinating.
Then take a mixer jar and prepare the (2 Cups of Thick and 1 and half cups of Thin) coconut milk and store in separate vessels.

Now take a separate mixer jar that is dry and put cloves,
green cardamoms and cinnamon to it and grind very coarsely. Do not make it a
fine powder. Next take a pan and pour oil and also add ghee together with it. Then
add the coarsely grinded masala ingredients into the pan of oil.
Soon after adding it, put the finely chopped onions into the
pan and sauté it until it loses its colour and gets slight golden brown colour.
After the onions fry, turn the flame to low and proceed with
further cooking. Do not forget to lower the flame at this stage to avoid
messing out with the dish and the cooking environment with chilli smoke all
around. Then put the ginger and garlic paste with this and fry nicely. Let these
ingredients also to turn to reddish shade and after that add chilli, coriander
and turmeric powders with it.
Once all the ingredients have fried, put the mutton that you
have marinated with curd for about 2 hours. After adding the meat, fry it
further for some time. Mutton cooks well when fried in oil rather than boiling
in water. For proper procedure of cooking mutton, it should initially be fried
without salt and water. So at this stage sauté for few minutes occasionally and
let the oil from all these ingredients to separate and float on top.
After the oil tops up, add thin coconut milk and salt and cook
it for about 15 minutes either in a closed pan or in a pressure cooker.
After 15 minutes you can add thick milk and let it to cook
further until the entire dish thickens.
The perfect colour of the final dish must be slightly
reddish White. Wait until you get this colour and a thicker consistency for the
graviness. The flavour of the Tamil Nadu modish Mutton Gravy with Coconut Milk
will itself indicate you that the dish is ready.
