Ingredients needed to prepare Ash Gourd and Spinach Curry / Suraikaai Keerai Kari
Oil - 1 Tablespoon
Cumin Seeds - 1 Teaspoon
Ash Gourd - 1 Full (300 grams)
Spinach - 300 grams
Onion - 1 Big (Sliced)
Tomato - 1 Big (Sliced)
Salt - To Taste
Turmeric Powder - 1/4 Teaspoon
Chili Powder - 1 Teaspoon
Ash Gourd and Spinach Curry / Suraikaai Keerai Kari Cooking method
First take a cooker and add sliced onion, tomato and any variety of spinach with it and cook it for only one whistle and let it to cool. After that grind this like a paste and keep it aside.
Now chop the ash gourd and keep it ready for cooking.
Take a pan and add oil to it. Let the oil to heat well and then add cumin seeds to it. When the cumin seeds fry to reddish colour you can add the cooked and grinded onion, tomato and greens paste with this.
Next add salt, chili powder and turmeric powder with this.
Keep frying this for some time in medium flame. Saute the ingredients now and then so that it does not stick at the bottom of the vessel.
Then add the finely chopped ash gourd with this and add some water along with it. Use only little amount of water because ash gourd itself has water content in it.
Close the pan and wait for about 5 to 10 minutes and your Ash Gourd and Spinach Curry / Suraikaai Keerai Kari is ready to be served.
