Mini Quesadilla is normally a mexian dish. The method of preparation and ingredients that will be typically available only in mexico makes this dish mexian. I tried the same recipe with ingredients easily available in Tamil Nadu. Mini Quesadilla came out very well in Tamil Nadu Style.

Bell Pepper (Capsicum)
Rajma or Soya Beans
Cheese (Grated)
Coriander leaves
Onion (Chopped)
Lemon Essence
Chapathi/ Roti
Chat Masala
Oil
Know how to make Mini Quesadilla in Tamil Nadu Style with above ingredients
Take oil in a pan and heat it for some time.
After oil heats up put onions in it and fry until it turns transparent.
Then put various colors of capsicum chopped into long slices.
Following this, add carrot that is sliced in the same way.
Ensuing it, put coriander leaves into it.
Pre cook rajma or soya beans in a cooker by adding little salt and stain excess water from it.
Then add chat masala in it and saute once.
Next pour lemon essence in it and mix it well.
Slightly cook chapathi's with wheat flour and keep it ready. Now take a chapathi and fill half of the portion with this cooked Quesadilla mixture and then top grated cheese over it.
Now fold the chapathi into two and shallow fry it on both sides.
