Rusk - 10 pieces

Sweet corn (boiled) - 1/2 cup
Capsicum (chopped) - 1/4 cup
Cheese - 1 tbsp
Pepper powder - 1 tsp
Salt - 1 tsp

How to prepare rusk with cheesy vegetable delight

In this recipe I have made use of sweet corn and capsicum for the vegetables. Instead of these, you can make use of any other vegetable of your choice.

First we have to boil the sweet corn. For this take water in a bowl and add sweet corn in it. Let it to cook for few minutes and then drain all water content from it.

Now chop the capsicum into small pieces. Capsicum need not be cooked. It tastes good even without cooking and is good for health when it is used raw like in salads.

Then take a bowl and add boiled sweet corn, chopped capsicum, required amount of salt and pepper and finally cheese. Mix all these ingredients well so that all tastes blends evenly. We are going to use this mixture as the topping for our rusk delight.

Now take each rusks one by one and top it with a scoop of above said mixture.

Cheese is easily available in markets. If you could not find it, you can prepare the same dish with mashed onion and tomato instead of cheese. Do not make use of curd. The taste of the dish will be spoiled if you make use of curd instead of cheese.

Rusk with cheesy vegetable delight is a simple and a easy recipe. This rusk with cheesy vegetable delight is said to be a fingering dish or a starter. You can serve this dish as a breakfast in your tiffin boxes. It can also be served for a crispy crunchy snacks for the evening time.
