Sweet Puttu without Puttu Maker

Usually, puttu is a dish that people consider hard to prepare. It needs proper components like puttu maker with a pot in the bottom or a cooker top puttu maker is also available now a days. But if you do not have any of the above said puttu maker and still your taste buds long to have a soft and sweet puttu, there is a way we discovered from the old age tamil nadu style practices. This will seem to be a little tougher procedure. But you can prepare a quantum of this rice flour that is needed to prepare for several times in a month time. This will make your sweet puttu recipe simple.


Items needed to cook Sweet Puttu without Puttu Maker

Rice Flour – 2 Cups
Jaggery – 1 ½ Cups
Ghee – 1 Tsp
Cashew – 10 Nos.
Coconut (Grated) – 2 Tbsp
Cardamom (Powdered) – ¼ Tsp
Dry Ginger – ¼ Tsp
Turmeric Powder – ¼ Tsp
Salt – a Pinch

Brief demonstration for cooking sweet puttu with just an idly maker

First take raw rice and let it to soak in water for about half an hour.
Then wash it thoroughly for 4 to 5 times and let it to dry in shade by putting it on a clean dry cotton cloth.
After few hours touch and see, let it to be with slight moisture.
At this stage, transfer this rice into a dry pan and fry it in slow flame for some time.
Until it gets a good golden brown shade throughout, you have to sauté it.
Then grind it to a fine powder. You can do it either with mixer or take it to rice mill and make it as fine flour with the help of machine.
An important point is the fineness of the flour. If the rice flour is grinded coarsely, it will not turn into a soft and sweet puttu. Softness depends only on the flour’s fineness. So be very careful with this point.
You can prepare more quantity of this flour at a time and store it in refrigerator for using it multiple times.
After getting this flour ready, there are only few easy steps left out. You can finish up these steps within minutes.
Now take a pan and pour ¼ cup water in it. Add turmeric powder and a pinch of salt and heat it.
Then just sprinkle few drops of water and mix this rice flour.
Make it into small balls and place them in idly cooker.
Now steam - cook this rice flour balls for 10 minutes.
In mean while you can prepare the jaggery essence. Jaggery is a sweet ingredient that even sugar patients can consume in a limited amount. So it is a healthy constituent to this sweet puttu recipe.
Make the whole jaggery into small pieces and put in a pan with few drops of water. Do not add more water because more water will make our sweet puttu soggy.
Now heat this jaggery and bring it to slightly thicker consistency. See that all jaggery pieces get melted completely. To check the perfect consistency of jaggery, take a drop of it and pour inside water. Then try to take it with your fingers and see that it does not dissolve in water. It should come out in your fingers as a non sticky ball. This will be the right consistency for jaggery. Do not let it to boil more than this.
Now filter this jaggery so that residual fine dusts in it will be removed.
By this time rice balls for the sweet puttu will be steamed and cooked well.
Now take it out and break the balls into powder. Do it after heat subsides a little bit. It is not just enough if you break it into powder with your hands. You must either put it through a colander or mince it in a mixer jar with just a whip.
Now take this powdered puttu and add filtered jaggery essence to this.
Mix jaggery evenly in the cooked and sieved rice flour.
Now our sweet puttu is ready with only garnishing left out. You do not even need puttu maker to make this sweet puttu recipe. We have just demonstrated briefly, how to make it with just idly maker.
For garnishing, take a pan and heat a spoon of ghee in it. To this add cashew nuts, grated coconut, cardamom powder and dry ginger powder one after another. Following this you can also add raisins if you like.

Now garnish our sweet puttu with this ghee fried ingredients and serve it as a healthy snack or breakfast.
