Sweet potato puff cake is an interesting sweet dish and a good appetizer. As potatoes usually have rich carbohydrates, sweet potato puff cake will be a great breakfast for your hungry weekend mornings. It is a south indian dish that is prepare with Tamil Nadu style of ingredients and cooking procedures.

Maida (All Purpose) Flour - 1 cup
Wheat Flour - ¼ cup
Egg – 2 No. (Optional)
Mandavellam (Jaggery) – ¼ Cup
Milk - 1 cup
Cardamom – 2 No.
Soda Salt – a pinch
Salt – a pinch
Ghee - 3 tbsp

First take a bowl and add Maida
flour, wheat flour, soda salt and salt to it and blend everything evenly.
Now take a pan and put the jiggery
into it. Add just 3 to 4 spoons of milk to it and let it to heat for a while.
As the jaggery heats, it will get
melted. Once the jaggery melts filter it into the bowl containing mixture of
flours.
If you wish to add egg with this
dish, then separate yellow (yolk) of the egg and add with the above
ingredients.
Now mix all these ingredients
together to get a batter consistency.
You may doubt what to do with the
whites of the egg. It is an important process in getting a soft and downy sweet
potato puff cakes.
For that you have to pour the egg
whites in a separate vessel and with the help of a whizzer, strike it continuously
until you get pliable yielding.
Finally add this egg white to the
batter and mix for some more time.
Now take a puff cake mould and
put it on medium flame over the stove.
Add little ghee in all moulds and
grease them thoroughly.
Turn the flame to low while thesweet potato puff cakes cook on the second side. This will help in maintaining comfortable
cooking temperature for the next set of sweet potato puff cakes.
Finally you can serve it hot with
either honey or jaggery puree as side dish.
