Healthy South Indian Cucumber Caprese Bites in Tamil Nadu Style - An easy recipe with little tedious preparation. It will be the best snacks for those who are under diet. It will be a tasty tiffin time dish or a starter.

Ingredients required for preparing healthy South Indian Caprese Bites in Tamil Nadu style

Tomato - 2
Any pulses (boiled sprouted) - 1/2 cup
Cheese - 1/2 cup
Onion - 1/4 cup
Lemon essence - 1/2 tsp
Salt - to taste
Pepper - 1 tsp

For garnishing

Coriander leaves (chopped)
Cheese (Grated)

Cooked Sprouted pulses to add into above mixture
Let us go through the recipe for preparing Healthy South Indian Caprese Bites in Tamil Nadu Style

Previously we have to sprout and cook some pulses like green gram, black gram, horse gram, chickpeas, cowpeas and any other varieties of legumes.

For sprouting the pulses, soak a mixture of any pulses in water for about 8 to 10 hours. Usually doing this overnight will be good. After soaking it overnight, drain the water content and place it in room temperature in a open vessel for few hours. You can close it with a wet cloth and leave it until evening. Now your sprouted pulses are ready for cooking.

If you are going to prepare this Healthy South Indian Caprese Bites for breakfast, then soak it throughout the day and sprout it in the night time. So that sprouted pulses will be ready in the morning.

Now for cooking this sprouted pulses, you have to take a pan and put these sprouted pulses in it. Add water in 1:1 ratio and a pinch of salt to it. Cook by closing the pan until all water in the pan evaporates. Do not add more water because the dish will become soggy if there is excess water. Also do not overcook since too much cooking will also make this recipe soggy.

Cucumber to fill cooked sprouted pulses with cheese mixture
First take the tomatoes and slice them into two half. remove the seeds and the juicy portion inside the tomato. This is because it will not make our South Indian Caprese Bites recipe soggy. Make use of cherry tomatoes if it is available in markets. Now chop this cherry tomatoes into small pieces. Next chop onion and coriander leaves into small pieces.

Now take a bowl and put the cooked sprouted pulses, onion, tomato, coriander leaves, lemon essence, pepper powder and little salt.

If you feel that sprouting the pulses is a tedious task, you can find it in vegetable markets. Packed sprouted pulses are available in ready made in shops.

Now it is time to cut and make the cucumber ready for filling sprouted pulses mixture. Cut one side of the cucumber and then using a narrow knife remove the seeds part inside the cucumber. Next remove the skin around the cucumber. Then fill the mixture that you have prepared previously.
