Tindora/ Kovakkai Fried Rice/ Pulao with Homemade Chili Tomato Sauce

Ingredients required for Tindora Fried/ Kovakkai Rice/ Pulaav with Homemade Chili Tomato Sauce


Oil – 100 ml

Tindora (Kovakkai) – 2 Cups

Basmathi Rice – 4 Cups

Onion – 1 Big

Ginger – 2 Inch Piece

Green Chili – 4 Pieces Split Lengthwise

Garam Masala Powder – 2 Teaspoons

Curry Leaves – ½ Cup

Coriander Leaves – ½ Cup

Coconut Grated – ½ Cup

Lemon Juice – 1 Teaspoon

Salt – To Taste


Recipe for preparing Tindora/ Kovakkai Fried Rice/ Pulao with Homemade Chili Tomato Sauce


First take a pan and add 100 ml oil to it and let it to heat well.

At the same time take basmathi rice in a vessel and pour enough amount of water with it for boiling. Add salt with it and cook until the rice boils.

Once the oil heats, add the Tindora/ Kovakkai that is marinated with a pinch of salt for few minutes.

You can either fry the Tindora/ Kovakkai little by little or the entire thing at a time.

But it must be deep fried to slight golden colour for best taste.

Once all the Kovakkais get fried, remove it from oil and keep aside.

Now in the same oil, add the onions and fry to golden brown.

Then add finely chopped ginger and green chillies split length wise with it and fry further for some time.

After a while add garam masala powder curry leaves and coriander leaves with it and sauté for few minutes.
With this you can also add the fried Tindora / Kovakkai and grated coconut.

By this time rice would have got boiled. Drain the excess water from the rice and put the rice in a wide open pan for some time. By doing so, the rice will not be sticky.

Then add a spoon of lemon juice and rice along with a pan of ingredients and mix them all well.

And now hot and healthy Tindora / Kovakkai fried rice with grated coconut is ready to be served.

For best serving suggestions use chilli tomato sauce as side dish for this Tindora / Kovakkai Fried Rice.
