Paniyaaram Maavu/ Aapam Maavu Preparation Procedure

Both Paniyaaram Maavu and Aapam Maavu is prepared in the same way and so we can prepare one batter and prepare and varieties with it. Ingredients required for preparing Paniyaaram Maavu/ Aapan Maavu

Idly Rice (Par Boiled) - 400 grams

Raw Rice - 1 Handful

Urad Dal - 1 1/2 Tea Spoon

Fenugreek seeds - 1/4 Tea Spoon

Cooked Rice - 1 Table Spoon/ 1 Handful

Paniyaaram Maavu/ Aapam Maavu Preparation Procedure

Take Idly Rice, Raw Rice and Uard Dal in a vessel and wash them well with clean water at least three times.

Soak all these ingredients in a big vessel with enough amount of water. Now add the fenugreek seeds into this vessel and soak it together with other ingredients. It will take about 4 hours to soak all ingredients. You can also soak it overnight if you are going to grind it in the morning time.

After soaking it, grind these ingredients all together in a wet grinder. For grinding, set up the wet grinder and add a glass of water to it. When adding water, be careful not to add excess amount of water. Because our batter should be very thick. Put one handful or ladle of mixture of ingredients and then start the wet grinder. Add the ingredients little by little into the grinder with the help of a ladle.

Add cooked rice to this grinding mixture. This will give softness to the Paniyaaram or Aapam.When we pour Aapam in a tawa, it will look spongy with lot of tiny holes. Same way when we split one Paniyaaram and look, we could see porous holes in it. To get this we have to add cooked rice along with the batter while grinding. Some people even add soaked old rice (Palaya Saadham) for better results. Adding cooked rice or cooked old rice will help in fermentation of the batter.

Grind until the batter becomes soft. If you feel that more water is required, sprinkle little by little. Do not add in glasses anymore. Pour little water only if you feel that grinder is about to get struck. My grinder takes about half an hour to make the batter soft. Not all wet grinders will do it in same time period. Your grinder may take more or less time to make the batter soft. So check and wait until your Paniyaaram Maavu/ Aapam Maavu is very soft and smooth.

Add just a pinch of salt to the grinding mixture. This is just to support the batter to get fermented. Otherwise no need to add salt or any sweet ingredients to this batter. After grinding and fermenting we can add salt if we are going to prepare Kaara Paniyaaram/ Saadha Aapam, Veg Paniyaaram/ Veg Aapam, Non-Veg Paniyaaram/ Non-Veg Aapam or Muttai Paniyaaram/ Muttai Aapam. Else if you are going to prepare Sweet Paniyaaram/ Sweet Aapam you can add Jaggery syrup to it.

After your Paniyaaram Maavu/ Aapam Maavu has grinned soft and smooth, you can switch off the wet grinder and take the batter in a bowl. With this batter you can prepare a lots of varieties of Paniyaaram and Aapam.
