How to Prepare Tamil Nadu Special Keerai Saaru

Tamil Nadu special keerai saaru is a healty recipe for lunch. It is rich in Iron as the main ingredient added in it is Keerai. Not only because of that, the other ingredients added in it also enhances the healthiness of the recipe. The combination of Coconut, Kasa Kasa (Poppy Seeds) and Jeeragam (Cumin Seeds) added in it is a good treatment for stomach/ intestine wounds. This Tamil Nadu special Keerai Saaru is a dish that is good to have when you have over body heat. All ingredients added in this Tamil Nadu special Keerai Saaru recipe cools the body. Any variety of Keerai can be used to prepare this Tamil Nadu special Keerai Saaru Recipe. Mainly when we use Milagi Thakkali Keerai it is perfect for the above said treatments. We can also use a mixture of two or three Keerai to prepare this Tamil Nadu Special Keerai Saaru recipe.

Ingredients required to prepare this Tamil Nadu Special Keerai Saaru Recipe

Keerai – 1 Bunch
Small Onion – 1 Cup
Coconut – 1 shell
Mustard seeds – 1 Tea Spoon
Jeeragam (Cumin Seeds)– 1 Table Spoon
Gasa Gasa (Poppy Seeds) – 1 Table Spoon
Dry Red Chilly – 4 Nos.
Asofoetida – 2 pinches
Thick boiled Milk – 1 Cup (room temp.)
Salt – To Taste
Water – as much as required

Preparation Procedure for Tamil Nadu Special Keerai Saaru

First take the keerai and wash it in free-flowing water three times.
Now take a dry pan and add Kasa Kasa (Poopy Seeds) and Jeeragam (Cumin Seeds) in it. Heat these ingredients for one or two minutes and take it off the flame.
Next in a mixer jar and add coconut and the fried ingredients. Make it into a fine paste and keep it aside.
In olden days all dishes were prepared using open pan like sand pot or aluminum vessel. Now a-days most of the women are working people and so most of the dishes are practiced with pressure cooker for faster cooking. Let us prepare this recipe too with a pressure cooker.
Take a pressure cooker and put the washed Keerai in it. With this add small onions, salt and required amount of water. Keep few small onions for seasoning. Close the cooker and let it to cook for 5 whistles. My cooker takes 5 whistles for most of the dishes. You cook it according to your convenience.
After switching off the flame wait until the pressure subsides and open the cooker. Add the grinded contents to this cooker.


For Seasoning

Take a table spoon of oil in a small pan and heat it. In it add mustard seeds, dry red chilly, curry leaves and few small onions. Once all these ingredients are fried add this seasoning to the cooker. Let the dish to get to room temperature and add cooled boiled milk.

This dish is not suitable to be served hot. Because we cannot add milk when this dish is hot. Also the taste and health benefits of the Tamil Nadu special Keerai Saaru dish will not be fulfilled without adding milk to it. This is not a spicy dish. It will have mild taste of spiciness. It is a good lunch recipe. It will suit best as a side dish for rice. This Tamil Nadu special Keerai Saaru is a simple recipe if you have all required ingredients handy.
