Tamil Nadu Hotels Special Plain Chalna/ Salna Homemade Recipe

Chalna is a dish that is a variation of Kuruma/ Curry or Gravy. Chana/ Salna is mostly made plain without adding any vegetables or non veges. Sometimes it is also made with vegetables, chicken, mutton or any other non veg. The final consistency of any Chalna/ Salna should be thin.

Today we are going to try at home how to prepare Tamil Nadu Hotels Special Plain Chalna/ Salna. This Chalna/ Salna goes well with chapathi, poori, parotta and Biriyani.

Ingredients Required for Preparing Tamil Nadu Hotels Special Plain Chalna/ Salna

Cinammon Stick - 1 Inch Piece

Cardamon - 2 Pieces

Cloves - 5 Nos.

Bay Leaf - 1 Big

Onion - 1 Sliced

Tomato - 1 Sliced

Ginger & Garlic Paste - 1 Table Speed

Oil - for frying

Salt - To taste

Ingredients to Dry fry and powder

Dry Chilly - 5 Nos.

Cloves - 5 Nos.

Cinnamon Stick - 1 Inch piece

Star Anise/  Ani Seed - 1 Full piece

Coriander seeds - 1 Table Spoon

Fennel Seeds - 1 Tea Spoon

Black Pepper - 1 Tea Spoon

Turmeric Powder - 1 Tea Spoon

Ingredients to make paste

Coconut - 1 Cup Grated

Poppy Seeds - 1 Tea Spoon

Cashew Nuts - 10 pieces whole

Roasted Gram - 1 Table Spoon

Preparation Procedure for Tamil Nadu Hotels Special Plain Chalna/ Salna

Preparing Dry Fried Powder

First take a dry pan and add all the ingredients that has to be dry fried.

Keep the flame in medium heat and roast those ingredients for 2 or 3 minutes. You will get aromatic flavor from those ingredients. That is when you have to switch off the flame.

Let it to get to the room temperature and then make it into a fine powder using a dry mixer jar.

Now our all in one masala powder is ready. If you have garam masala powder in your home that will substitute this powder. But if you are using ready made garam masala powder, you should also add plain coriander powder, chilly powder and turmeric powder along with it.

Grinding the paste

Now take the ingredients to make paste (Coconut, Cashew nuts, Poppy Seeds and Roasted Gram).

Put it in a mixer jar and grind it into a smooth paste. Keep it aside.

Cooking Tamil Nadu Hotels Special Plain Chalna/ Salna

For this take a pan and add two table spoons of oil in it. Heat it in medium flame until it reaches right temperature.

Now add cinnamon, cardamons, cloves and bay leaf and wait for a minute.

In this add onion and fry until it turns translucent.

After frying onion add the ginger and garlic paste and fry until it turns golden brown in shade.

Now add tomatoes in it and cook until it becomes completely soft.

After that add our all in one masala powder that is dry fried and kept ready. Along with this you can also add required amount of salt.

Fry it for few minutes and then add the ground paste. Along with it add required amount of water and let it to boil.

Now our Tamil Nadu Hotels Special Plain Chalna/ Salna is ready. It is the simplest side dish that will suit for various dishes.
