Number of Servings - 2 Persons
Ingredients Required for preparing Tamil Nadu's Special Coconut Rice Recipe
Cooked Rice - 2 Cups (200 grams)
Oil - 2 Table spoons
Mustard Seeds - 1 Tea spoon
Urad Dal - 1 Tea spoon
Bengal Gram - 1 Tea spoon
Cashew Nuts - 10 Pieces (chopped)
Curry Leaves - 1 Bunch
Green Chilly - 2 Nos. (Slit)
Ginger - 1 Inch Piece (Finely Chopped)
Coconut - 1 Cup (Grated)
Salt - As per taste
Preparation Procedure for Tamil Nadu's Special Coconut Rice Recipe
1. Cook the rice with required amount of salt in a pressure cooker or in an open pan and set it aside. I usually prefer pressure cooker to prepare variety rices like this Tamil Nadu's Special Coconut Rice.
2. Now take oil in a pan and heat it in high flame. Once the oil is hot enough add mustard seeds, urad dal, bengal gram, cashew nuts curry leaves, green chilly and ginger one after another. To get the best result of Tamil Nadu's Special Coconut Rice Recipe, use Gingerly oil. I specifically mention this because in kerala style they use coconut oil and some others use sunflower oil.
3. After all these ingredients gets fried, sim the flame and put in the grated coconut and a teaspoon of salt. Remember that you have cooked the rice with required amount of salt. So the salt you are adding here is only for the coconut mixture.
4. Let all the ingredients to mix well. Finally add the cooked rice and mix it very well so that the flavor spreads evenly.
Now our Tamil Nadu's Special Coconut Rice is ready to serve. Switch off the flame and transfer the contents into a serving bowl. As I said before, try this recipe along with egg curry or any other curries as side dish.
