In this article let us see how to prepare Aartukari Podimass (Lamb/ Motton Podimass).
Garlic - 5 pieces
Green Chilly (Slit Lengthwise)- 2 Pieces
Tomato (Small) - 1 No.
Coconut (Grated) - 1/2 Cup
Fennel Seeds - 4 Tea Spoons
Cloves - 4 Nos.
Cumin Seeds - 2 Tea Spoons
Turmeric Powder - 2 Tea Spoons
Chilly powder - 2 Tea Spoons
Powder the fennel seeds (2 Tspn) and cloves together and keep it ready
Make a paste of few small onions, cumin seeds, Fennel seeds (2 Tspn) ans turmeric powder
In the mean while we can start cooking the rest of the recipe in a pan.
Take a thick bottom frying pan and and add 3 Tea Spoons of oil to it.
Once the oil is hot add powdered fennel and cloves.
Immediately add curry leaves, onion, garlic, green chillies and tomato one after the other. Now let it to fry for sometime.
After frying the above ingredients for sometime add grated coconut and fry further. Just fry it until the moisture content from the coconut is evaporated. Do not let it to fry until golden brown.
By this time the mutton will be cooked along with the rest of the ingredients that you added. Remove the pressure from cooker and open it.
Now transfer the ingredients from cooker to the frying pan. All our ingredients are already cooked. So need not let to cook anymore. Just let all the water contents in the dish to evaporate by keeping in high flame and stirring it continuously.
In this stage check the taste. If you wish to add more spice, you can add little chilly powder to it and mix thoroughly.
Once all the moisture content from the dish is evaporated, our Aartukari Podimass (Lamb Motton Podimass) is ready. You can serve it hot with your meals. This Aartukari Podimass (Lamb Motton Podimass) can also be enjoyed as a snack.
