Ghee - 1 and 1/2 Cups
Roasted Gram Flour - 1 Cup
Sugar - 1 Cup
Water - 1/4 Cup
Now let us see the Ghee Mysore Pak Preparation Procedure
Take a dry pan and let to heat in medium flame.
Add the roasted gram flour to it and fry it for some time. The flour will lose it raw flavor and give a nice smell. Fry until that.
After frying the roasted gram flour transfer it to 1 cup melted ghee and stir well. In this stage do not put it on flame. Just stir without any lumps and keep it aside.
Now let us prepare the sugar syrup. Take a thick bottom frying pan and add a cup of sugar to it. In this add 1/4 cup water and boil it. Let the sugar to melt completely. Once the syrup starts to boil stop heating. (This stage is call "Oru Kambi Padham" in Tamil). You can check this by taking a small amount of syrup with your thumb finger and fore finger and pulling your fingers apart from each other. When you do like this you will get a string or thread like thing within your fingers. This confirms the correct stage.
Now add the roasted gram flour into this sugar syrup and stir is well. Mix it thoroughly and continuously for some time.
Let all the ingredients to thicken. When the ingredients in the pan starts to bubble from the bottom start adding the remaining 1/2 cup ghee little by little. Make sure that you are using thick bottom non stick pan so that you can avoid burning at the bottom. You have to mix until last without taking out your hand. Do not panic by reading this note. Our Ghee Mysore Pak is going to be ready in very less amount of time.
As the ingredients gets thickened the color will also become darker. When the mixture is thick and dark enough to match the best Ghee Mysore Pak you have ever seen, you can take it off the flame.
Now immediately transfer it to a flat pan that is layered with ghee. Spread it uniformly using a spoon or a pizza knife. Cut it into desired size and shape when the Ghee Mysore Pak is warm itself.
