Ingredients required for preparing Brinjal Curry
Brinjal – ¼ kg (Diced)
Onion – 2 (Chopped)
Tomato – 2 (Mashed)
Ginger – 2 inch piece (Grated)
Red Chili Powder – ½ Tea spoon
Pepper Powder – ¼ Tea spoon
Sambar Powder – 1 Tea spoon
Turmeric Powder – ¼ Tea spoon
Asafetida – ¼ Tea spoon
Coriander Powder – ¼ Tea spoon
Fennel Powder – ¼ Tea spoon
Salt – As much as required
Oil – As much as required
Brinjal Curry Preparation Procedure
Take oil in a pan and let it to heat well. After the oil heats well put the brinjal in it and sauté it for some time.
Let the color of the brinjal skin to get darkened.
Then add onion to it and sauté further. Onion has to be fried until it loses its color and becomes transparent.
Add salt, turmeric powder, pepper powder, chili powder, asafetida powder, fennel powder, coriander powder and finally sambar powder.
After this add the mashed tomatoes and grated ginger to it and sauté well. Fry all these ingredients until the oil from it separates.
And that’s it. Now your delicious Brinjal Curry is ready to serve.
