Ingredients Required for Preparing Tamarind Masala Rice
Dry Red Chilies - 5
Coriander Seeds - 200 grams
Pepper Seeds - 1 Tea spoon
Fennel Seeds - 1 Tea spoon
Asafetida Powder- 1/2 Tea spoon
Sesame Seeds - 1 Tea spoon
Fenugreek Seeds - 1 Tea spoon
Curry Leaves - 3 Stem
Cooked Rice - 2 Cups
Tamarind Masala Rice Preparation Procedure
Take a dry pan and fry all the above said ingredients except cooked rice and asafetida. Do not mix everything together and fry. Fry them one by one and then mix it together.
After all these ingredients have fried in a dry pan and cooled, take a mixer jar and transfer them to it. Now add the asafetida powder in this mixy and grind everything together.
Now you can add the tamarind paste which you have to prepare previously. For preparing tamarind paste you have to soak it for about half an hour in water. Later blend it well and filter it in your hands only with the help of your finger gaps. This way of filtering is enough. Do not use a filter because the tamarind extract will get wasted if you use that.
You have to keep this powder and this tamarind paste ready before starting preparing the Tamarind Masala Rice. These are the tamarind paste masala powder that we are going to use for the Tamarind Masala Rice.
Now you have to take a pan and add oil to it. After the oil heats put mustard seeds, red chili, curry leaves, channa dal, groundnut, masala powder and let it to fry. The masala powder fries very quickly. Soon after this masala powder fries add the tamarind paste to it. Then wait until the mixture cooks very well.
Let it to be in low flame after it starts to boil. And then let it to cook until the oil from it floats to the top.
Then take the rice the you have cooked by adding required amount of salt to it. To this rice add this tamarind paste and mix it well. You need not prepare this tamarind masala and use it immediately. You can keep this paste for about one week to ten days. You can mix it with the rice and have it for your lunch whenever you require. But it is necessary that you preserve it properly. Keep the paste in a tightly closed container and put it into refrigerator until when you need it.Do not keep it for more than ten days.
Once you mix the rice with the tamarind masala finish it up within that day. Do not keep this for more than a day. You can have this tamarind masala rice with any side dishes or you can even have it as such without any side dish. You can make this rice for a special occasion.
