Mexican dishes mainly include olives celery, red bell pepper and parsley in it. So for making a typical Mexican rice, here in this recipe i am going to make use of all the above said ingredients.
Ingredients Required for preparing Mexican Rice
Basmati Rice - 1 Cup
Red Bell Pepper (Finely Chopped) - 1
Tomato (Finely Chopped) - 3
Onion (Finely Chopped) - 1 Big
Garlic - 5 Pieces
Vegetable stock with
Carrot
Onion
Tomato
Garlic
Masala stick
Clove
Palaver leaf
Celery (Sivari Keerai)
Parsley
Salt - as much as required
Olive Oil - Table Spoons
For Garnishing
Black Olives
Red Bell Pepper and
Celery Stem
Take olive oil in a pan and heat it for some time.
First add finely diced red bell pepper to it and fry it well.
To this add finely chopped onion and fry it till the onion loses its color completely.
Now add chopped tomato to it and cook for some time.
If you add salt, it will cook sooner. So you can now add required amount of salt to it and pour little water now and then whenever needed.
Then you can add the garlic pieces to it along with the red chilies.
After cooking all these ingredients very well, take it out from flame and let it to cool.
Now take a mixer jar, transfer all the contents to it and grind them into a fine paste. This will be the basic ingredient that is required for making Mexican rice.
Next take a non stick pan and add 2 table spoon olive oil to it. Mexican rice can be cooked in this non stick pan itself very easily.
To this add the paste that you have made already.
For cooking the Mexican rice instead of water you should make use of vegetable stock. Basically for cooking basmati rice water should be 1:2 ratios. But as we are going to cook this Mexican rice in a non stick pan instead of a cooker, you should take the stock in 1:3 ratios. That is, if you are taking one cup of basmati rice, then use the same cup and add 3 cups of vegetable stock to it.
Vegetable stock can be made in different forms. For preparing the Mexican rice, you can add the vegetables like carrot, onion, tomato, garlic, masala stick, clove, palaver leaf, celery (Sivari Keerai), and parsley. All these ingredients will give Mexican taste and flavor. Boil all these vegetables in water for about half an hour.
Drain out the vegetables and the water that remains is the vegetable stock that we are going to use in this Mexican rice.
Add this vegetable stock to the non stick pan and then add basmati rice and salt to it. Then you can leave the non stick pan closed for about 20 minutes.
After the basmati rice has boiled well, you can add black olives and red bell pepper to it to give more Mexican touch to it.
Then you can serve it by garnishing it with the celery stems.
