Ingredients required for preparing Hot Spicy Ragi Vegetable Fried Bakes
Greens Puree (Any Spinach) – 1 cup
Cauliflower (Spared) – 1 Cup
Ragi (Finger Millet) Flour – 1 & ½ Cup
Chickpea Flour (Konda Kadalai) – ½ Cup
Green chilies (Chopped) – 10 Pieces
Ginger (Paste) – 1 Tea Spoon
Turmeric Powder - ½ Tea Spoon
Red Chili Powder – 1 Tea Spoon
Tamarind Paste – 1 Table Spoon
Sugar – a pinch
Salt – As much as required
Oil to shallow fry
Recipe/ Cooking procedure for Hot Spicy Ragi Vegetable Fried Bakes
- First take a vessel of water and put the cauliflower pieces to it. Boil the cauliflower pieces just for 3 to 5 minutes. This is because if there are any insects in cauliflower, it will be destroyed. Then wash the cauliflower well in running water for 2 to 3 times. Now spare them into granules and this is spared cauliflower.
- Next clean the greens and wash it thoroughly for 2 to 3 times. Then let the water to drain and grind it to a fine paste. This is greens puree.
- Now take a bowl and add the Ragi flour and chickpea flour to it. Then add the greens puree and spared cauliflower to this.
- You can also add all the other ingredients (Chopped Green Chilies, Grinded Ginger Paste, Turmeric Powder, Red Chili Powder, a Spoon of Tamarind paste, a pinch of sugar or sweetener and required amount of salt).
- After adding all these ingredients knead the dough uniformly. If it is necessary add little water with this and knead it.
- Once you have kneaded these ingredients make it like a thick crust sheet either with the help of a chapatti roller or with your hands itself.
- Now take a pan of a cooker and grease it with oil, ghee or butter. Then lay this thick crust in the cooker pan and steam it with water boiling under the bowl. Steam it in closed cooker.
- After this thick crust is steamed, take it out from the pan and cut it to any shape that you wish.
- Then shallow fry them in a non stick pan with oil/ ghee or butter.
- Finally you can place them in serving plate and serve it hot with any sauce or chutneys.
