Ingredients required for preparing Coriander Rice
Any Rice (Boiled) – 4 Cups
Coriander Leaves (Mashed) – 1 Cup
Oil – 4 Tea Spoons
Salt – To Taste
Mustard Seeds – 1 Tea Spoon
Split Bengal Gram - 1 Tea Spoon
Cumin Seeds – 1 Tea Spoon
Onion (finely chopped) - 1 Cup
How to cook Coriander Rice easily
Cook the rice in a separate vessel such that it is not sticking with each other. While cooking the rice, you can add little amount of salt if required. But this is only optional as we are going to add salt the end.
Then take a pan and add oil to it. Let the oil to heat in medium flame and once the oil heats well put the mustard seeds. Wait for the mustard seeds to pop up.
After the mustard seed pops up, add the cumin seeds and again let it to pop up.
Now add the split Bengal Gram and let it to turn to slight brown color.
Then add the finely chopped onion and let it to lose its color and turn to slight golden brown.
After this, add the Coriander leaves that you have already washed thoroughly and mashed finely.
You need not let it to cook for long time after adding the leaves. The Coriander rice will taste tremendous when the freshness of the leaves remain unchanged. The flavor and look of the dish will also be awe-inspiring when the rawness of the coriander leaves remains as such.
So soon after adding the mashed coriander leaves, you can also add the cooked rice and required amount of salt.
You just have to sauté it once or twice and shut out the flame.
