Ingredients Required for Saucy Chicken Shashlik in Typical Tamil Nadu Style
Cardamom – 3 Pieces
Cinnamon – 2 Inch Stick
Cloves – 3 Pieces
Mustard – 1 Tea Spoon
Salt – To Taste
Garam Masala – 3 Tea Spoons
Onion (Sliced) – 1
Small Onion – 1 Cup
Ginger – 3 Inch Piece
Garlic – 6 Pieces
Green Bell Pepper – 1 Big
Red Bell Pepper – 1 Big
Tomato – 2 (Hybrid Quality)
Tomato Sauce – 1 Tea Spoon for Marinating
Oil
For Garnishing
Curry Leaves
Coriander Leaves
Garnishing is optional as this dish itself is colorful and the look of the dish is awesome.
Saucy Chicken Shashlik Preparation Procedure in Typical Tamil Nadu Style
First take a bowl and add the chicken to it. In this you can also add the green bell pepper, red bell pepper and onion in it. To this bowl you can now add the marinating ingredients.
For marinating paste, take a pan and add some oil to it. Heat the oil and add small onions and fry until it turns to golden color. Then add the Ginger and Garlic to this pan and fry further. To this you can also add garam masala and salt and shut out the flame. Now add tomato sauce also to this and grind all these ingredients using a mixer jar.
Now add this grinded mixture to the bowl and let it to marinate for an hour.
In mean while you can make the sauce for the chicken shashlik. We are going to prepare this sauce in typical south Indian Style. Usually Tamil Nadu style of cooking includes spices in non veg dishes. Also Tamil Nadu’s specialty is to make use of small onions that is said to be sambar onions in some places.
For preparing sauce for the shashlik chicken, take a pan and add some oil to it.
Heat the oil and add mustard, cinnamon, cloves and cardamom to it.
After all these ingredients fry, put the small onions (Sambar Onions) to it and fry until it turns to golden brown.
To this add ginger and garlic and fry further.
Then add sliced tomato and sauté until it cooks well. For faster cooking of these ingredients and for taste add little salt to it.
Also add garam masala powder to this and sauté it further for some more time. At this stage you can add some water to this and keep it for boiling for a while. Do not let it to become dry gravy as we have to spread this gravy over the Chicken shashlik sticks
In this gap you can take a shashlik stick (Tooth Picking stick) and prick in all the marinated ingredients one by one alternately. First place a green bell pepper, next an onion slice, then place a red bell pepper and finally a chicken piece followed by the same ingredients again. Like this you have to prick in all the ingredients in various sticks.
After pricking these ingredients you can fry it in either ways. You can smoke fry in charcoal, shallow fry in a pan or deep fry in a pan of oil. You can also fry it in a microwave oven if you have it. Most people prefer smoke frying or oven frying. It is also healthier as it will be a diet conscious dish.
After frying the Chicken Shashlik Sticks place them in a plate or a bowl and spread the shashlik sauce that is prepared in typical Tamil Nadu Style over it. Now you can garnish it is required and serve it hot.
